Box Hill Central, in partnership with Melbourne Food & Wine, is celebrating the best of Melbourne's mall food culture and food-court favourites.

Raph Rashid, founder of Beatbox Kitchen, Taco Truck and All Day Donuts, has been busy feasting his way through Box Hill Central with his friend Rosheen Kaul - celebrated Chef and accomplished food writer, to create the ultimate snack ... the Lemon Chicken Bao.

Raph Rashid

 Raph Rashid was born to the snack life – or, as he’d call it, the snacc life – growing up above a Malaysian restaurant in Melbourne. Street food and street culture have been parallel passions for him from an early age, whether it was graffiti, hawker stalls, skating or hip hop, and he can wax lyrical on how to produce doughnuts as readily as he can talk about the production on J Dilla’s Donuts. He is one of Australia’s food-truck pioneers, and his Beatbox Burger and Taco Trucks remain welcome sights at music festivals and on the streets of Victoria today. He’s also a celebrated photographer, a broadcaster, publishes his own magazine, and is husband to designer Beci Orpin and the father of two snacc sons, Tyke and Ari. He was inducted into the Melbourne Food & Wine Festival Legends Hall of Fame as a trailblazer in 2013.

Rosheen Kaul

Rosheen Kaul is an author, food personality, and chef. Most recently helming the kitchen of award-winning Brunswick East restaurant Etta, she draws on vibrant flavours from her childhood in Singapore and Kashmiri, Peranakan Chinese, and Filipino roots to create food that is as culturally diverse as she is. 

Together with co-author and illustrator Joanna Hu, Kaul released The Isol(Asian) Cookbook in 2020, drawing attention from The Guardian, to which she is now a regular contributor. In 2022, Kaul and Hu published their first cookbook, Chinese-ish, to widespread acclaim, swift positioning on bestseller lists and a highly prestigious James Beard Media Award win. Since late 2022, Kaul has also contributed to Good Food as a recipe columnist.
